The Fall season is the perfect time for apple picking — and super simple Caramel Apple Cupcakes! We will be venturing to a local orchard in a couple of weeks, and I cannot wait to pick up some fresh apples. Some of them will go toward making this yummy apple dessert!
Super Simple Caramel Apple Cupcakes
1 package spice cake mix (can use carrot cake mix, too)
2 cups chopped peeled tart Apples
(from A Hint of Honey)
7 -8 cups confectioners? sugar
3/4 cup butter, softened
1/2 cup apple cider or apple juice
3/4 tsp. ground cinnamon
pinch of salt
caramel sauce (for drizzling)
Preheat oven to 350F. Line muffin tin, set aside.
Prepare cake batter according to package instructions. Add in chopped apples, stir with wooden spoon.
Fill cupcake liners 3/4 full. Bake for about 20 minutes or until toothpick comes out clean. Allow to cool completely before frosting.
For the frosting, combine sugar, butter, cider, cinnamon, and salt in a large bowl. Beat with electric mixer until light and fluffy – this will take about 3-4 minutes.
Drizzle the caramel sauce on top of the frosting.
